I just recently discovered boil-in-bag rice and am currently kind of obsessed with it. Now, don’t get me wrong, rice is one of the easiest things to cook in the first place but this makes it just a little bit simpler (and faster!). Follow the directions on the box to cook the rice. When there’s around two minutes left on the timer, put the vegetables in the microwave following the instructions on the bag. Once both the rice and vegetables are cooked and have cooled for the appropriate amount of time, mix them together in a bowl. Add your favorite sauce(s)–I’m rather fond of a mix of teriyaki and soy sauces–and mix well. Voila! A quick, healthy and yummy snack!
